A map of stability for various water/oil/pea protein compositions has been plotted from the numerous reported results. Two clear regions were identified. High internal oil phase emulsions with 70–80%, v/v content stabilized by total pea concentration <2.5%, w/v showed stability. Low 10–30%, a range concentrations >0.5%, have also identified as stable. Intermediate and >4% are unexplored likely to be areas fruitful future research. The wide suggests that different stabilization mechanisms...

The coexistence of two phases in concentrated dispersions monodispersed platelike particles is reported. Small-angle neutron diffraction has been used to identify a highly ordered phase which coexists at equilibrium with less ordered, dense phase. interparticle interactions were varied by adjusting the salt concentration, and this influenced concentration transition occurred. Columnar or layer structures could account for observed pattern from are discussed.

Abstract Protein extracted from Moringa oleifera (MO) seeds has been advocated as a cheap and environmental friendly alternative to ionic flocculants for water purification. However, the nature mechanism of its interaction with particles in water, well dissolved surface‐active molecules, are not understood.
