The effect of ultrasound treatment on particle size, color, viscosity, polyphenol oxidase (PPO) activity and microstructure in diluted avocado puree was investigated. treatments were carried out at 20 kHz (375 W/cm2) for 0–10 min. surface mean diameter (D[3,2]) reduced to 13.44 μm from an original value 52.31 by after 1 A higher L∗ value, ΔE lower a∗ observed treated samples. dilution followed pseudoplastic flow behavior, the viscosity (at 100 s−1) min 6.0 74.4 times than control samples...
The viable but nonculturable (VBNC) state is a survival strategy adopted by many pathogens when exposed to harsh environmental stresses. In this study, we investigated for the first time that whether high pressure CO2 (HPCD), one of nonthermal pasteurization techniques, can induce Escherichia coli O157:H7 into VBNC state. By measuring plate counts, cell counts and total E. in 0.85% NaCl solution (pH 7.0) was able enter HPCD treatment at 5 MPa four temperatures (25°C, 31°C, 34°C 37°C)....
In this investigation, the effect of different concentrations titanium dioxide (TiO2) nanoparticles (NPs) on structure and antimicrobial activity chitosan-based coating films was examined. Analysis using scanning electron microscopy (SEM) atomic force (AFM) revealed that modified TiO2 NPs were successfully dispersed into chitosan matrix, roughness chitosan-TiO2 nanocomposites significantly reduced. Moreover, X-ray diffraction (XRD) Fourier transform infrared spectroscopy (FTIR) analyses...
The effectiveness of iturin A (IA) and chitosan (CTS) coating, alone or in combination (CTS-IA), against mango anthracnose caused by Colletotrichum gloeosporioides was investigated. In vitro tests, concentrations IA ranging from 0.03 to 0.12 g/L, CTS 10 g/L 20 significantly inhibited the growth C. gloeosporioides. Moreover, with 15 demonstrated an additional inhibitory effect on growth. vivo experiments, had a synergistic preventing lesion expansion mangoes after days storage at 12 °C....
An investigation was conducted into the utilization of treatments combining ultrasound and lysozyme (US + Lys) to deactivate Salmonella typhimurium (S. typhimurium) in liquid whole egg (LWE). Furthermore, US Lys heat treatment (HT) with a similar microbial inactivation effect were comparatively evaluated by examining their impact on quality attributes LWE. The LWE treated at 35-45 °C 605-968 W/cm2 for 5-35 min, HT 58-64 3-4 min. Lysozyme (Lys) alone achieved minimal degree S. typhimurium,...
Sea buckthorn pomace is a by-product of sea products that not effectively utilized. This study obtained polysaccharides (SPs) from pomace, analyzed its structure, and investigated regulatory effect on the gut microbiota imbalance induced by cefixime. The results showed SPs had an average molecular weight 6.26 × 103 kDa mainly consisted galacturonic acid, galactose, rhamnose. Biochemical analysis increased concentration short-chain fatty acids (SCFAs) abundance Proteobacteria,...
Blueberries are a rich source of health-promoting compounds such as vitamins and anthocyanins show high antioxidant capacity. Thus, considerable commercial scientific interest exists in prolonging its postharvest life to meet the year-round demand for this fruit. In investigation, effect chitosan-based edible coating, well coating containing nanosized titanium dioxide particles (CTS-TiO2), on quality blueberry fruit was evaluated during storage at 0 °C. The blueberries were treated with...
Changes in the microbial, physicochemical, and sensory properties of blended strawberry-apple-lemon juice were investigated to comparatively assess influence three processing treatments, namely high hydrostatic pressure (HHP) (500 MPa/15 min/20 °C), ultrasound (US) (376 W/10 min/35 heat treatment (HT) (86 °C/1 min) over 12 days storage at 4 °C. The results showed that total aerobic bacteria (TAB) counts HHP-, US-, HT-treated blends less than 2 log10 CFU/mL, yeast mold (Y & M) 1.3 coliforms...
Chitosan nanoparticles (CSNPs) have attracted wide interest; however, there has been no substantial information about a direct comparison of the antimicrobial activity CSNPs on bacteria and fungi. Thus, in this study, simple, economically feasible were synthesized assessed for their activity. This investigation indicated that coordination inducing effect could dissociate tryptophan (Trp) tyrosine (Tyr) residue groups peptide chain bovine serum albumin (BSA) molecule, thereby increasing...
