Diabet. Med. 27, 1159–1167 (2010) Abstract Aims To determine the blood glucose lowering effect of cinnamon on HbA1c, pressure and lipid profiles in people with type 2 diabetes. Methods 58 diabetic patients (25 males 33 females), aged 54.9 ± 9.8, treated only hypoglycemic agents an HbA1c more than 7% were randomly assigned to receive either 2g or placebo daily for 12 weeks. Results After intervention, mean was significantly decreased (P<0.005) group (8.22% 7.86%) compared (8.55% 8.68%)....

Five glutenin subfractions (R 2 –R 6 ) were extracted by sequential centrifugation and addition of sodium chloride, from defatted flours three wheat cultivars viz. Aubaine (extra‐strong), Hereward (strong) Riband (weak). Seven minutes mixing time was used to carry out fractionation on the basis depolymerization macropolymers (GMP) using a 2‐g Mixograph traces. Depolymerization GMP occurred at much higher rates in dough weak compared with strong extra‐strong cultivars. Protein content also...

Biscuit was defatted with chloroform baked bakery fat but without lipid addition. Semisweet biscuits from flatter, denser, harder showed collapse gas cells during baking when compared control Defatted doughs exhibited a different rheological behavior samples showing higher storage loss moduli (G' G' ' values), that is, high viscoelasticity....
