Chitin production was biologically achieved by lactic acid fermentation (LAF) of shrimp waste (Litopenaeus vannameii) in a packed bed column reactor with maximal percentages demineralization (DMIN) and deproteinization (DPROT) after 96 h 92 94%, respectively.
