O objetivo desta pesquisa foi avaliar a qualidade de físico – químicos do queijo coalho comercializado no município Barreiros PE. As amostras foram coletadas em pequeno supermercado - PE, entre os meses julho dezembro. Os valores médios encontrados para parâmetros físico-químicos foram: umidade-36,37g/100g; cinzas-4,31g/100g; cloretos-2,00g/100g; acidez- 1,47(g/100g ácido láctico); extrato seco 63,56g/100g. Não houve diferença (p>0,05) queijos comercializados Barreiros/PE físico- químicos.
