Different strategies to avoid the lipid feedstock oxidation in enzymatic synthesis of monoglycerides (MAG) from glycerolysis babassu oil were tested.The reactions catalyzed by Burkholderia cepacia lipase immobilized on SiO 2 -PVA and tests carried out batchwise.The best strategy was tested a continuous packed-bed reactor.Different antioxidants emulsifiers used, including: Buthyl-hydroxy-toluene (BHT), tocopherol, soy lecithin Triton X-100.The influence inert atmosphere (N ) MAG production...
