Invertase from NOVO Nordisk has been immobilized in controlled pore silica particles (diameter: 0.351 mm and mean size: 37.5 nm) by covalent binding with the silane-glutaraldehyde method. The activity of free enzyme (IE) was determined 5% (w/v) sucrose, at 35 to 65ºC pH 3 7. Maximum activities were found range 5 6 for invertase, 4.5 IE. Activity yield IE 24%. The thermal stability and the energy of deactivation free invertase immobilized enzyme (IE) was measured at temperatures in range 35 to 65°C for hydrolysis a 5% w/v sucrose solution. pH 5.0 is stable up 50°C period 4 h. Invertase controlled pore silica by silane-glutaraldehyde covalent method 55ºC, 4.5 same period.
