This study aimed to investigate the potential use of cold-pressed coconut oil by-products (COB) as a low-cost alternative source for plant-based drink and ice cream production. Firstly, was produced from (COB drink) compared with commercial drink. The fat, protein, zeta values obtained COB were higher than those samples. In addition, particle size value found be lower that second stage, full-fat low-fat samples using control (produced by in terms rheological, sensorial, thermal properties....
In this study, four different drying techniques, namely, hot air (HAD), vacuum (VD), ultrasound-assisted (UAVD), and freeze-drying (FD), were applied to blueberries. The times of blueberries 1290, 1050, 990 min for HAD, VD, UAVD, respectively, meaning that ultrasound application significantly reduced the time. All dried samples except those with FD showed lower total phenolic content antioxidant capacity than fresh samples. Samples had a higher bioactive compounds other techniques followed...
This research focuses on antimicrobial edible films made from protein and crude fiber obtained cold-pressed chili pepper seed oil by-products. Films with were assessed for structural, mechanical, barrier, properties. Mechanical tests showed P-CF Film had better flexibility, while P achieved the highest elongation at break (33.76%) tensile strength (0.46 MPa). Barrier properties revealed that containing both lower water vapor permeability significantly higher oxygen than only or fiber....
In this study, the phenolic compounds of oil mill waste (OMW) were extracted through cloud point extraction method using lecithin as a surfactant. For purpose, effects equilibration temperature and time, pH, concentration NaCl on recovery (%) total content (TPC) investigated by single-factor experiments further optimization process variables was carried out response surface analysis. The TPC values OMW 4830.50 ± 414.7 mg GAE/L, 7545.25 766.89 TyE/L, 5220.22 390.68 HyTE/L. Antioxidant...
This research aimed to explore the potential utilization of protein (P) and fiber (F) extracted from cold-pressed hot pepper seed oil byproduct (HPOB) in enhancement rheological properties, emulsion stability, oxidative stability a low-fat salad dressing with 10% content. The assessment involved examination several aspects, including physical qualities such as behavior, particle size well microstructure stability. It is worth mentioning that all emulsions had desirable characteristics,...
This study investigated the potential utilization of milk thistle seed protein (MTP) isolates in gluten-free muffins to enhance quantity and technological attributes. MTP was employed partially substitute a blend including equal amounts rice flour corn starch (RCS) at 3%, 6%, 9%, 12%. The encompassed rheological assessment muffin batters physicochemical, textural, sensory analyses muffins. consistency coefficient (K) exhibited an increase with incorporation MTP, all demonstrating...
This study aimed to investigate the utilization of cold-pressed chia-seed oil by-products (CSOB) in a low-fat ice cream formulation as fat replacer and stabilizer. In study, emulsion mixtures were formulated by using 0.2-0.4% xanthan gum (XG), 2.5-12.5% fat, 1-3% CSOB. Optimization was performed response surface methodology (RSM) full factorial central composite design (CCD) based on flow behavior rheological properties emulsions obtained from 17 different experimental points. All samples...
In recent years, interest in the consumption of dried goji berries has increased due to its high bioactive properties. Alternative drying methods that provide faster and better preservation properties should be developed. This study aims investigate effect different on time quality characteristics berry; namely, hot-air (HAD), ultrasound-assisted vacuum (USVD), (VD), freeze-drying (FD), ultrasound-pretreated (USFD). The kinetic, total phenolic content, antioxidant capacity, profile,...
This study aimed to determine the effect of different drying methods, namely hot air (HAD), vacuum (VD), ultrasound-assisted (USVD), and freeze (FD) on kinetic, total phenolic antioxidant activity, anthocyanin profile, in vitro-bioaccessibility color quality raspberry samples. The time was 540, 720, 1,140 min for USVD, VD, HAD, respectively, indicating that USVD showed a significantly lower than VD HAD. results TPC, CUPRAC, DPPH analysis FD had higher bioactive compound retention other...
This study aimed to investigate the potential use of cold-pressed hot pepper seed oil by-product (HPOB) in a low-fat salad dressing improve its rheological properties, emulsion, and oxidative stability. The total phenolic content (TPC), 2,2-Diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity, CUPRIC reducing antioxidant capacity (CUPRAC) values were 317.4 mg GAE/100 g, 81.87%, 6952.8 Trolox/100 respectively. capsaicin, dihydrocapsaicin, carotenoid 175.8 mg/100 71.01 106.3 µg/g, All...
Recombinant collagen and collagen-like products are increasingly replacing animal-sourced that is difficult to produce in safe standard quality. In this study hydroxylated collagen, a 400 base pair fragment of the bovine COL1A1 gene was co-expressed with prolyl-4-hydroxylase subunit α (P4Hα) β(P4Hβ) encoding P4H enzyme Komagataella phaffii. For purpose, each target inserted into pPICZαA vector then cloned E. coli DH5α cells. Subsequently, co-expression vectors were constructed using...
This study seems to be the first effort determine viscoelastic properties of dilute ovalbumin colloids using dynamic-light-scattering-based optical microrheology carboxylated melamine microparticles as tracer probe. A generalized form Stokes–Einstein equation constructed based on Laplace transformation mean square displacement, 〈Δr 2 (t)〉, was employed compute moduli (storage modulus, G′, and loss G″). (t)〉 determined increase with time by reaching a maximum plateau at between 10 −3 −1 s no...
Flaxseed oil rich in α-linolenic acid (ALA) has many health beneficial properties, but suffers from oxidation degradation due to its unsaturated nature, and may need a protective delivery system apply different food formulations. In this study, the rocket seed gum was used as novel encapsulation agent produce freeze-dried powders. The (RSG), arabic (GA), their combination were at two oil: wall material ratios. Replacing GA with RSG changed flow behavior of emulsions Newtonian shear-thinning,...
