The aim of this work was to define the most appropriate time harvesting early ripening peach fruit using destructive and non-destructive quality indexes such as index absorbance (IAD), measured with DA-Meter, a portable equipment able measure degradation chlorophyll in pericarp. In context our research carried out 2009 2010 on several cultivars.
