Abstract Nutrient-dense colostrum can be employed as a functional food ingredient. This work aimed to produce novel probiotic Cream cottage cheese (FPC) using (ABT) culture and bovine powder (BCP) at levels of 1, 2, 3%. Physicochemical properties (antioxidant activity, fatty acid profile, antibacterial activity) were analyzed. The outcome revealed that hardness, cohesiveness, gumminess increased while springiness chewiness decreased for the treated cheeses. In FPC, medium-chain acids...
Camel milk has nutritional and therapeutic properties. Quinoa flour been incorporated into many kinds of food because its various nutrients bio-actives. This study aimed to investigate the effect using quinoa on properties low-fat camel processed cheese spread (LF-CMPCS) made from fermented retentate as a base.Quinoa was used substitute 1, 3 5% base with Ras cheese. The resultant cheeses were analyzed for several parameters. Such physiochemical, texture properties, antioxidant activity,...
Milk clotting enzyme (MCE) of Moringa oleifera from prepared seed cake (PSC) dissolved in acetate buffer pH 5.0 recorded the highest activity compared to other samples, as well 20–40% saturation ammonium sulfate precipitated MCE with 28.20% yield and 1.01 purification fold. The proteolytic (PA) crude PSC was higher than those partial purified 180.81 155.47 MCA/PA ratio, respectively. moringa exhibited their optimal at 60 °C; it could be capable coagulate different milk types. Also, goat soft...
Heat stress is a major challenge for dairy farmers, as it can have significant impact on milk production. The purpose of this research was to investigate the differences in compositions colostrum and mature from various animal species (Aberdeen Angus cows (AC), Baladi (BC), goats (BG)) under desert climate New Valley Governorate, southwest Egypt. physicochemical properties, protein fractionations, fatty acid composition, vitamin A cho-lesterol contents AC, BC, BG were evaluated. studied had...
The purpose of this research was to evaluate the effect feeding lactating goats with flaxseed on physicochemical, sensory properties, yield, texture and fatty acids profile Domiati cheese.Goat's milk resulted from goat feed different levels (0, 7 14%) were used in preparation goat's cheese which stored at 4±1ºC for 60 days. Results showed that supplementing level 7and 14% had significantly (P < 0.05) increased protein, total solids lactose, while no observed fat.Cheese yield 0.5) supplemented...
