Abstract The synthesis and characterization of a new protein–polymer conjugate composed β lactoglobulin A (βLG A) poly(ethylene glycol) PEG is described. βLG was selectively modified to self‐assemble by super‐charging via amination or succinylation followed conjugation with PEG.
