Abstract The changes in regular canola oil as affected by frying temperature were studied. French fries fried intermittently that was heated for 7 h daily over seven consecutive days. Thermo‐oxidative alterations of the at 185 ± 5 or 215 °C measured total polar components (TPC), anisidine value (AV), color formation, and fatty acid composition tocopherols. Results showed TPC, AV, trans content increased significantly ( P < 0.05) a function time. polyunsaturated acids (PUFA) decreased...

The antihyperglycemic effects of chemically synthesized d-chiro-inositol (d-CI), a component an insulin mediator, have been demonstrated in rats. Buckwheat contains relatively high levels d-CI: thus, it has proposed as source d-CI for reducing serum glucose concentrations diabetics. present study evaluates the buckwheat concentrate, containing d-CI, on hyperglycemia and tolerance streptozotocin (STZ) In fed STZ rats, both doses concentrate (containing 10 20 mg d-CI/kg body weight) were...

Abstract The search for endogenous components in food ingredients exhibiting antioxidant activity has been intensified order to eliminate synthetic antioxidants. Tocopherols are widely used as natural antioxidants, although their protective ability is not always sufficient. Buckwheat seed were evaluated and free radical‐scavenging activities using solvents of different polarities isolate from hulls groats. Components extracted buckwheat pro‐oxidant canola oil. Antioxidant extracts groats...

Abstract Oxidative degradation of cholesterol has been extensively researched, however, not all products formed have established. When a phytosterols standard was heated at 60, 120 and 180 °C for different period time the following groups components were detected: oxidized phytosterols, fragmented phytosterol molecules, volatile compounds oligomers. Taking into account formed, we able to balance amounts disappearing sterols with formed. We established that amount type during thermo‐oxidative...

Abstract The composition and content of lipids, fatty acids, triacylglycerols, tocopherols sterols in nine fenugreek genotypes were analyzed. Lipid seeds ranged from 5.8 to 15.2%. Major acids were: linoleic acid (45.1–47.5%), α‐linolenic (18.3–22.8%), oleic (12.4–17.0%), palmitic (9.8–11.2%) stearic (3.8–4.2%) acids. ratios n‐6 n‐3 between 2.1 2.7.
