We propose a sensitive and selective spectrofluorimetric method for the determination of flavonoids as expressed in 'quercetin equivalent' apple juices. The various molecular species of 12-tungstophosporic acid (WPA) in aqueous solutions different pH values (from 1 to 11.5) were investigated by UV, IR, and NMR spectroscopy. dependence the attained equilibrium composition solution on time, concentration WPA, type buffer used was studied.
