This review article briefly introduces the applications of bacterial cyclohexanone monooxygenases to enantioselective oxidations organic sulfur compounds sulfoxides. High enantioselectivities are observed in sulfoxidation alkyl aryl sulfides, disulfides, dialkyl cyclic and acyclic 1,3-dithioacetals. The oxidation sulfides with flavin dependent microorganisms extends synthetic interest this class enzymes.
Enzymatic hydrolysis of oleuropein carried out in a NMR tube, gave two diastereoisomeric aglycones, which have been identified and characterized by proton carbon experiments the same aqueous reaction medium.
