Different formulations of blue edible inkjet inks were prepared in this study using chitosan oligochitosan as a binder. The properties different the ink analysed by measuring conductivity, surface tension, viscosity, and antimicrobial properties. Chromaticity density experiments also conducted on inks. Results show that quality printed matter was improved considerably, including enhanced resolution, resistance, reduced graphic burrs, after addition oligosaccharide.
