This study investigated the effects of dietary chitosan oligosaccharide (COS) supplementation on meat quality, antioxidant capacity, and muscle fiber characteristics in thigh broilers. The results showed that COS decreased shear force increased crude protein content nutritional value muscle, while decreasing C16:0, C18:0, total saturated fatty acids.
