Safflower (Carthamus tinctorius L.) is a promising oilseed crop with potential applications in the food, pharmaceutical, and industrial sectors. This study aimed to determine the oil ratios and fatty acid compositions of sunflowers grown in warm climate Çukurova region at different sowing dates. It was found that crude fat standard, mid-oleic high-oleic sunflower types were 42.57%, 39.35% 39.07%, respectively. Crude significantly decreased (p<0.05) SD4 (sowing date 4, May 30th).
