FT-IR, in combination with residual amino group determination using a fluorescence technique, has been used to investigate the chemical functional groups involved cross-linking reaction between glutaraldehyde and gelatin molecules. The results suggest that, at high pH values (i.e., close pK(a) of lysine), is mainly governed by well-known Schiff base formation, whereas low when lysine are protonated), may also involve -OH hydroxyproline hydroxylysine, leading formation hemiacetals.

Kafirin nanoparticle-stabilized Pickering emulsions (KPEs) were used to encapsulate curcumin. The stability of KPEs under processing conditions and their protective effects against photo-oxidation curcumin lipid oxidation oil in emulsions, as well the digestion profiles gastrointestinal tract, investigated. found be more stable acidic than basic environment, elevated temperature induced structural instability. effect on chemical was manifested when subjected UV radiation compared other...

Turbidity, dynamic light scattering, and electrophoretic mobility were used to study the effects of added salt on coacervation in system composed strong cationic polymer poly(diallyldimethylammonium chloride) (PDADMAC) oppositely charged mixed micelles Triton X-100 (TX100) sodium dodecyl sulfate (SDS). The phase behavior range ionic strengths from 0.05 0.60 M includes regimes soluble complex formation, coacervation, precipitation. corresponding boundaries are determined differential...

Chemically reduced bovine serum albumin (BSA) has been used to modify the surface of water-soluble CdTe quantum dots (QDs). It is demonstrated that denatured BSA (dBSA) can be conjugated QDs and thereby efficiently improve chemical stability photoluminescence yield (PL QY) QDs. inferred a shell-like complex structure CdTe(x)(dBSA)(1-x) will form on "core", resulting in enhancement PL intensity blue shift peak. This study effects pH dBSA concentration optical properties dBSA-coated suggests...
