This study aimed to evaluate the biochemical and nutritional profiles of three cauliflower cultivars—Valentena, Carotena, Snow White—focusing on chlorophyll, carotenoids, anthocyanins, vitamin C, flavonoids, phenolics, antioxidant activity.
