Enzymatic hydrolysis of protein is a principal method to obtain antioxidant peptides. A yak casein hydrolysate (YCH) was prepared by alcalase and trypsin digestion. This study investigated the influence of activities glyceraldehyde-3-phosphate dehydrogenase (GAPDH) and lactate dehydrogenase-B (LDH-B) on colour stability mutton. Forty-nine physiological and biochemical indices of blood in blue peafowl were determined this report. Significant differences observed the hematocrit, alkaline phosphatase, CO2-M anion gap (<i>p</i> < 0.01), as well mean corpuscular hemoglobin, a-hydroxybutyrate dehydrogenase, Mg<SUP>2+</SUP>, erythrocyte number, glutamicpuruvic transaminase, total protein bile acid 0.05) different sexes.
