Three dietary fiber (DF) powders; soluble (SDF), insoluble (IDF) and total (TDF) were prepared from cocoa bean shells (CBS) by enzymatic treatment. This study evaluated the total Phenolic Compound Content (PC) and biological activity of Cocoa Bean Shell (CBS).
