Abstract Magnetic freezing is nowadays established as a commercial reality mainly oriented towards the food market. According to advertisements, magnetic able generate tiny ice crystals throughout frozen product, prevent cell destruction, and preserve quality of fresh intact after thawing. If all these advantages were true, would represent significant advance in technology, not only for preservation, but also cryopreservation biological specimens such cells, tissues, organs. fields (MFs) are...
Although the thermal conductivity of liquid water is well established, many conflicting values for ice have been reported in literature. This work demonstrates that significant differences conductivities can be attributed to freezing conditions and measurement procedures. In this study, was measured over temperature range −5 −40°C using a commercial needle probe. The heating time data fitting method were first optimized. Then, effects rate, presence dissolved gasses water, magnetic field...
ABSTRACT PREDICTING the dynamics of bacterial spore pop-ulations under heat treatment at lethal temperatures is fundemental importance to design, control, and validation optimum thermal processes for commercial sterilization food pharmaceutical products. The populations during were analyzed determine reasons substantial discrepancies commonly found between predictions by conventional models experimental data. From this research a new model was developed that incorporated several...
Several studies suggest that single-domain biogenic magnetic nanoparticles could play a major role on the effectiveness of oscillating fields (OMFs) in improving food freezing. To evaluate potential superparamagnetic particles, we performed freezing experiments colloidal dispersion <10-nm maghemite (MNPs) subjected or not to 31.3-mT OMF at 50 Hz. Our results show that, our experimental conditions, Néel mechanism governs alignment dipole moments and, therefore, no significant MNPs rotation,...
ABSTRACT THE design, fabrication and testing of hollow cylindrical rods made aluminum are described as a more accurate alternative to commercially available plastic in the microbiological validation thermal processes. Heat penetration tests were carried out on cans distilled water fitted with or also filled instrumented thermocouples. Test results showed that contents followed product temperature history very closely, while units revealed appreciable lag response. The mechanical resistance...
Matters pertaining to application of a recently published model spore population dynamics during lethal heating are addressed as an aid persons who would apply the model. That accounts for activation dormant spores in addition inactivation both activated and spores. An interpretive, mathematical, system analysis its dynamic response isothermal, is presented. It includes effects parameter values sizes initial subpopulations, relation traditional, first-order model, estimation. Activation...
Abstract The effects of weak oscillating magnetic fields (OMFs ≤7 mT at 50 Hz) on freezing were studied in three systems different complexity. To do so, ferric chloride solutions, lactate dehydrogenase (LDH), and minced hake muscle experimentally infected with Anisakis L3 frozen without OMF application. OMFs did not affect kinetics either solutions or muscle. LDH activity, mortality, water-holding capacity the after thawing affected by either. Further studies are needed to evaluate...
