본 연구는 참깨 유전자원 핵심집단과 주요 품종 및 우량계통의 세사민과 세사몰린, 지방 함량변이를 분석하여 리그난 함량이 높은 품종육성을 위한 기초자료로 활용하고자 하였다. 시험에 이용된 143점의 함량 범위는 2.33 mg/g에서 12.17 mg/g으로 나타났다. 그 중 터키에서 수집된 IT184615은 가장 높아 개량을 유전자원으로 활용성이 것으로 판단되었다. 유전자원을 14개의 수집원산지별, 4개의 종피색(백, 황, 갈, 흑)별, SSR마커그룹으로 분류하고 함량과의 유의성을 검정한 결과 세사민, 세사몰린 함량은 수집원산지, 종피색 간에 유의한 차가 인정되었다. 러시아(10.0 mg/g), 네팔(9.08 mg/g)에서 유전자원은 다른 국가에서 유전자원보다 평균 높았다. 세사민 함량과 정의 상관관계가 있어 육성을 위해서는 두 성분을 동시에 높이는 방향으로 선발되어야 할 판단된다. 품종과 리그난, 함량의 지역간, 연차간 변이를 품질특성에 미치는 환경의 영향을 분석한 리그난과...

본 연구는 혈당상승 및 당뇨병 질환 개선을 위한 주요 목표효소인 α-glucosidase에 대하여 콩 기능성 성분인 isoflavone soyasaponin 성분에 대한 저해 효능 평가를 살펴보았다. 실험에 사용된 22종류의 성분 중 isoflavone에서는 genistein daidzein 성분이 α-glucosidase 억제 효능이 뛰어났으며, ICSUB50/SUB 값은 각각 8.8±2.6 13.7±2.5 μM로 양성 대조군인 acarbose(ICSUB50/SUB=620.2 μM)에 비해 70배 45배 더 우수한 효과를 보였다. 또한 성분은 대해 비경쟁적 저해를 하는 것으로 분석되었으며, Dixon plot을 이용하여 저해와 관련한 상수 KSUBi/SUB 10.1 14.5 분석되었다. 하지만 일반 종실에 많이 함유된 malonyl기 계열 배당체 형태의 isoflavone들은 100 μM 농도에서 효과가 없었다. 중에서는 그룹B 계열의 사포닌인 Ba, Bb
본 연구에서는 생물전환에 의한 품종별 참깨의 lignan 함량, 총 페놀 항산화 활성(DPPH radical 소거능, ORAC 지수)을 측정하였다. 그 결과 함량은 발효 참깨 S-3가 6.58 mg/g으로 가장 높았으며 비발효참깨 S-4가 2.17 낮은 수치를 나타냈다. 생물전환을 통한 시 5가지 모두 함량이 증가하는 것을 확인할 수 있었다. 발효참깨 S-2, 51.90 51.65 mg GAE/g으로 높았고, 비발효 S-5가 16.70 낮았으나 46.70 나타나 약 3배 이상의 증가된 함량을 보였다.
