This study investigated the changes in aroma composition and perception of sunflower oils induced by seed roasting using sensory-oriented flavor analysis. Volatile compounds were extracted solvent-assisted evaporation headspace solid-phase microextraction. Odorants characterized gas chromatography-olfactometry-mass spectrometry extract dilution The cold-pressed roasted contained 13 50 odorants, respectively, with factors between 1 256. Fifty-six odorants newly identified oils. Quantification...
An N-heterocyclic carbene-catalyzed highly enantioselective [3 + 3] annulation reaction of N-hydroxyphthalimide (NHPI) 3,3-disubstituted acrylates and N-Ts ketimines was developed. In most cases, the desired chiral dihydropyridinone products bearing an all carbon quaternary stereogenic center could be obtained in good yields with excellent enantioselectivities (>99% ee's), which demonstrated NHPI as a kind substrate NHC-catalysis.
As an important soil and water conservation engineering measure, more than 100,000 check dams are constructed across the Loess Plateau; these play a vital role in reducing floods sediment region. However, effects of on hydrologic process still unclear, particularly when they deployed as system for watershed management. This study examined modulated by dam typical Plateau catchment. By simulating scenarios with various numbers using distributed physically-based hydrological model, number...
Abstract The interaction mechanism of lactoferrin (LF) with Arachidonic acid (AA)/Eicosapentaenoic Acid (EPA) and rutin (RU) was investigated by spectroscopic method molecular docking technique. investigation revealed that LF AA/EPA bind to form a stable complex. quenching on the lactoferrin-fatty complex identified as static quenching. thermodynamic analysis further substantiated bonding process characterized an endothermic nature driven entropy, hydrophobic serving predominant driving...
Abstract The effects of processing on the content amino acids and fatty release glucose from quinoa grains were evaluated in this paper. processes included dehulling, boiling, extrusion, heating under pressure, baking (infrared heating). retention rate (AR) essential dehulled boiled was 100%. oil extruded samples two varieties 47.71% 39.75% lower than corresponding raw samples. Baking pressure had different acid content, hydrolysis starch. results indicated cooking methods affect...
The influence of inulin on the interaction sophoricoside (Sop) with whey protein concentrate (WPC) was investigated using various spectroscopic methods, including fluorescence spectroscopy (intrinsic fluorescence, synchronous and three-dimensional fluorescence), ultraviolet-visible (UV-Vis) spectroscopy, Fourier transform infrared (FTIR) molecular docking. Sop found to quench intrinsic WPC by a static mechanism, both without addition inulin, enhance antioxidant capacity protein. slightly...
Corn pericarp, which is an industrial waste of corn starch production, important source dietary fiber in cereals, with claimed health benefits. However, they used to be discarded or utilized as animal feed. The application pre-ultrasound treatment critical for achieving rapid preparation desired components from plant materials and preserving structural molecular properties these compounds. Ultrasonic-assisted was produce pericarp using response surface methodology. The optimal particle size...
Finely ground extruded corn pericarp dietary fiber (ECPDF) was incorporated in wheat flour at 2%, 5%, 8%, 10% and 12% levels the effects of ECPDF on dough rheology, raw cooked dumpling wrapper quality were investigated this paper. Results showed that water absorption, extensibility ratio number had significant correlation with replacement level; optimal cooking time loss rate decreased adding EPCDF from 0%–12%; all textural parameters wrappers significantly correlated addition; springiness,...
Abstract This study conducted a detailed evaluation of the nutritional value and proximate composition milled quinoa grain at different dehulling rates with goal identifying range that retain maximum level nutrients phytochemicals. Eleven samples processed were obtained through light abrasive milling. The relationship between rate was determined. As increased, proportions protein, fat, dietary fiber ash decreased, whereas proportion starch increased. With increase rate, increasing amounts...
Abstract Heating under pressure treatment (HUP) is a method which can keep the complete form of quinoa grain after processing, beneficial to development subsequent products. The conditions for heating was optimized by response surface methodology be: grains were regulated with adding 6.3% pH 7.0 water and heated 0.36 MPa 3–5 min, resulting in predicted maxima total phenolic content (TPC), Flavonoid Saponin 313.21 mg GAE/100 g, 1.621 mg/g, 16.78 mg/g values OH Scavenging Rate, DPPH ABST +...
