홍삼(Red Ginseng; RG)은 인삼보다 더 높은 생체 흡수율과 다양한 약리효과를 갖는 특이한 진세노사이드(Rg2, Rg3)를 함유하고 있다. 따라서 오랫동안 많은 사람들의 건강을 위해 이용되어 왔다. 또한 발효는 유효한 생리활성을 저분자의 물질들을 생성하기 때문에 연구자들이 생물학적 활성에 대해 연구해오고 본 연구에서는 홍삼을 붉은덕다리버섯 균사체로 7일 동안 발효하였다. HPLC 분석 결과 진세노사이드 Rg1, Re 및 Rb2가 각각 0.24, 0.25, 0.16 mg/g에서 0.12, 0.1, 0.03 mg/g으로 함량 감소를 확인하였고, 홍삼 붉은덕다리 균사체배양액(Fermented Red FRG)의 항염, 세포 이동, 항산화, 콜라겐 타입 I 합성과 MMP-1 억제효능에 대한 효능을 확인하였다. 그 결과, FRG는 RG보다 항염 cell migration 촉진효과가 우수하였다. 2012년 3월부터 10월까지 광주시내 초 중 고등학교 주변 어린이 식품안전보호구역내 분식점, 길거리음식점 등에서 판매되고 있는 김밥, 떡볶이, 꼬치류, 오뎅, 튀김류 등 식사대용 및 간식용 기호식품 조리식품 124건에 대해서 탄수화물, 지방, 단백질 영양성분과 나트륨, 당함량 등을 검사하여 고열량 저영양 식품 해당여부에 조사하였다. 35건 토스트 12건이 모두 포화지방과 나트륨의 기준을 초과하여 식품에 해당되었고, 89건 중에서 4건과 닭강정 5건이 열량기준을 초과하였고, 또한 슬러쉬 27건 20건이 당함량을 초과한 것으로 나타나 총 29건이 저영양식품에 해당되었다. 그러나 이번에 조사한 식품들은 슬러쉬를 제외하고는 판단의 한 요소인 함량이 높고, 등은 식품의 특성상 지방함량이 많아서 열량이 조리식품들이기 때문에 식사로 섭취하게 되는 식품과 마찬가지로 나트륨 높아서 식품으로 분류된 보인다. 따라서 식품이라 하더라도 한두 번 섭취한다고 해서 문제가 생기는 것은 아니기 편식을...
