Formulation of Calcium Enriched Finger Millet (Eleusine coracana) based Muffin Fortified with Nutri Seeds

ABSTRACT
Muffins are sweet baked products highly appreciated by consumers because of their soft texture and characteristic taste.However, traditionally muffins made up refined wheat flour (RWF) contain high amounts sugar fat which oppose the today's needs.The increasing interest in health regimes, fitness body appearance leads to a rise demand for products.Therefore, present study was undertaken develop value-added muffin type product using finger millet (Eleusine coracana), nutri seeds (pumpkin, poppy, chia seeds) molasses as substitute enhance desired mineral composition well nutritive values.The concentration ingredients processing conditions were optimized based on multiple trials quality evaluated sensory evaluation.A 9-points hedonic scale used evaluate color, texture, aroma, taste, overall acceptability developed product.The with higher selected physico-chemical nutritional evaluation compared control.The results showed that incorporated powder had score nutrition content.Moisture content control i.e., 13.39 g, whereas protein (8.28 g), (21.37), ash (1.15 g) fiber (2.88 found powder.Moreover, calcium phosphorus 150.2 mg 7.59 mg/100 respectively along DPPH scavenging ability (IC 50 value 14.14), total phenolic (14.86 ppm gallic acid equivalent (GAE), flavonoid (34.24 quercetin (QE) fortified significantly (p < 0.05) muffin.
