Wheat consumption can represent one of the nutritional factors involved in onset diabetes. We specifically investigated potential diabetogenic effects Hammurabi, a T. monococcum wheat cultivar, non-obese diabetic (NOD) mice and analysed levels resistant starch pasta manufactured with Hammurabi after vitro gastroduodenal digestion.
