ABSTRACT Tannins were analyzed on three cultivars of cowpeas at maturity stages. Cultivars differed in testa darkening which increased during maturation. Darker had greater tannin concentrations. Testa tannins up to 7‐fold maturation and 96% the found testa. The sum individually tested cotyledon was 10.7 times than that from analysis whole cowpea after grinding 20‐mesh.
