The potent odorants were quantified in a sample of roasted Arabica coffee. On the basis results, 27 dissolved an oil/water mixture. flavor profile model obtained was very close to that real sample. In duo and triangle tests, compared with models missing one or more odorants. These experiments indicated 2-furfurylthiol, 4-vinylguaiacol, several alkyl pyrazines, furanones, acetaldehyde, propanal, methylpropanal, 2- 3-methylbutanal had greatest impact on coffee flavor. Keywords: Aroma model;...

Abstract The concentrations of 22 potent odorants, including acetaldehyde, methylpropanal, 2‐ and 3‐methylbutanal, 2,3‐butanedione, 2,3‐pentanedione, 2‐furfurylthiol, 2‐ethyl‐3,5‐dimethylpyrazine 2,3‐diethyl‐5‐methylpyrazine, were quantified in the headspace roasted coffee powder. A model mixture containing these odorants was prepared on basis results found headspace. When evaporated, similarity aroma this to that sample scored 2.6 a scale 0 (no similarity) 3.0 (identical). Also, after...

Three tasty (BR-139, FA-624, and FA-612) two less (R-144 R-175) fresh greenhouse tomato cultivars, which significantly differ in their flavor profiles, were screened for potent odorants using aroma extract dilution analysis (AEDA). On the basis of AEDA results, 19 volatiles selected quantification those 5 cultivars gas chromatography−mass spectrometry (GC-MS). Compounds such as 1-penten-3-one, (E,E)- (E,Z)-2,4-decadienal, 4-hydroxy-2,5-dimethyl-3(2H)-furanone (Furaneol) had higher odor units...

Significant tomato matrix effects on the volatility of certain fresh odorants were found. The concentrations such as (E,E)-2,4-decadienal, beta-damascenone, and beta-ionone, in crushed fruit obtained by solid-phase microextraction (SPME), resulting from a calibration curve 5.5-, 2-, 12-fold higher, respectively, than those calculated based buffer solutions. Static headspace analyses indicated that, most cases, significantly retains relative to solution. Thus, concentration is lower expected...
