본 연구는 김치의 원 · 부재료와 절임배추에 부착된 미생물을 저감화하기 위하여 미산성 차아염소산수의 살균 최적화 조건을 탐색하였고, 이를 바탕으로 제조된 김치를 4°C에서 4주간 저장하는 동안 나타나는 미생물학적 및 이화학적 변화를 측정하였다. 배추는 대조구에 비하여 40°C에서 30 ppm미산성 차아염소산수로 20분간 침지하였을 때 1.75 log CFU/g, 무채는 같은 조건에서 5분간 침지 시 1.68 파는 10분 1.03 CFU/g으로 각각 가장 높은 효능을 나타내었다. 한편 10% 소금으로 절임한 배추를 세척할 ppm 세척시 2.91 CFU/g 저감 효과를 나타내 수도수로 보다 1 반면 위생처리된 고춧가루, 젓갈 등 양념으로 김치에서는 이들 양념에 오염된 농도의 총균수로 인하여 대조구와 처리구 간에 초기 총균수의 차이는 없었으나 대장균군은 40°C 차아염소산수 처리구가 현저하게 감소하였다(P0.05). 미생물과 측정한 결과 총균수는 저장 1주 후에 약 9...

최근 혈당조절에 도움이 되는 다양한 천연추출물에 대한 연구가 진행되고 있다. 귀리는 생리효능이 있는 것으로 알려져 있는데 특히 <TEX>${\beta}$</TEX> 클루칸은 체내 혈중 콜레스테롤 수치를 낮추어 심혈관 질환을 예방하고 비만과 관련된 성인병 예방에 효과를 보이는 보고되고 이에 본 연구는 상품화된 귀리 추출물로 이루어진 다운앤컨트롤(비엠제약)을 이용하여 6주간 무작위, 이중맹검, 실험군-대조군 임상 연구를 통해 혈당 및 콜레스테롤에 평가한 결과, 통계학적으로 유의한 차이를 보이지는 않았지만 당화알부민은 각각 시험군에서 50.33% 감소, 대조군에서 37.91% 감소 중성지방은 7.51% 3.98% 증가로 상대적으로 보여 시험약의 혈당저하 효과 중성지방의 감소효과를 일부에서 관찰할 수 있었다.
