Lipids are the key aroma contributors and nutrients in fermented fish products. A total of 376 lipid molecules were identified mandarin during fermentation by untargeted lipidomics, including glycerolipids, glycerophospholipids, lysoglycerophospholipid, sphingolipids, fatty acids (FAs), sterol lipids.
