Lipids are the key aroma contributors and nutrients in fermented fish products. A total of 376 lipid molecules were identified mandarin during fermentation by untargeted lipidomics, including glycerolipids, glycerophospholipids, lysoglycerophospholipid, sphingolipids, fatty acids (FAs), sterol lipids. Both composition content changed dynamically fermentation. Triglyceride (TAG, 30.05%) phosphatidylcholine (PC, 14.87%) two major lipids, with especially 39.36% saturated FAs PCs 35.34%...
The release of flavor compounds is a critical factor that influences the quality fermented foods. A recent study investigated interactions between four fermentation-stinky (indole, isovaleric acid, dimethyl disulfide, and dibutyl phthalate) myofibrillar proteins (MPs). results indicated all had different degrees binding to MPs, with phthalate disulfide exhibiting stronger interactions. Reduced hydrophobicity enhanced these Multi-spectroscopy showed static fluorescence quenching was dominant...
Fermented soybean meal (FSM), which has lower anti-nutritional factors and higher active enzyme, probiotic oligosaccharide contents than its unfermented form, been reported to improve the feeding value of meal, hence, growth performance piglets. However, whether FSM can affect bacterial metabolites in large intestine piglets remains unknown. This study supplemented wet-FSM (WFSM) or dry-FSM (DFSM) (5% dry matter basis) diet investigated effects on carbon nitrogen metabolism piglets'...
