Abstract This study aimed at investigating the quality attributes of Turkish fermented sausage (sucuk) incorporated with bay leaf extract obtained as a natural antioxidant and source phytochemicals. Five different extracts were distilled water 60%, 70%, 80%, 90% ethanol. The total phenolic contents activity values indicated that ultrasound‐assisted 70% ethanol was most suitable extract. Furthermore, five groups sucuks manufactured addition (1, 5, 10 mL/kg), ascorbic acid (500 mg/kg),...

In this study, it was aimed to investigate cultivation of Lentinula edodes by using different agricultural wastes (oak sawdust, poplar wheat stalk, peanut shell, corncob and vine pruning waste) determine the most suitable growing mixture/mixtures. For purpose, 12 mixtures were tested. Within scope experiment, besides measurement yield quality parameters mushrooms, properties enzyme activities (laccase cellulase) at periods measured. Based on results highest lowest amounts nitrogen obtained...

Zein and gelatin-pectin nanofibers including carotenoid microemulsion were fabricated by emulsion electrospinnig. The feed solution properties, fiber morphology, compounds encapsulation efficiency determined. particle size ranges of narrow (190–206 nm) with homogeneous distribution. A low PDI value (0.251±0.02) showed a uniform zein properties except viscosity decreased addition the microemulsion, while all for solution. Scanning electron micrograph images that along solvents significantly...

In this study, powder colorant was obtained from red cabbage ( Brassica oleracea L.). The stability of the colorants by spray and freeze drying investigated in terms antioxidant capacity anthocyanin content. yield products increased with encapsulation for both methods application. Drying method application had a significant effect on most physical properties powders except flowability adhesiveness values. An increase L*, a*, C values observed process. Antioxidant activity samples process...

Secondary compounds of fruit are among the essential concerns due to their positive effects on human health. Many studies have attempted improve these by applying different genotype or cultivation practices such as irrigation and fertilization. This study aimed find out effect harvest dates strawberry genotypes in terms total phenolic (TP), antioxidant activity (TAA), monomeric anthocyanin (TMA), some crucial individual during five-month growing season (January - May periods) with one month...

Abstract The effects of different irrigation regimes on yield and quality net profit processing red pepper irrigated with drip furrow systems under field conditions in the Mediterranean region Turkey were evaluated over two years. treatments for consist full (DFI), deficit DDI‐75, D‐PRD‐50, DF‐PRD‐50 DDI‐50, furrow: (FFI), fixed alternative (FAF‐50) PRD (FPRD‐50). FAF‐50 FPRD‐50 received 50% water applied to FFI. In same furrows while was alternately. Irrigation methods levels had a...
