토종닭과 일반 육계의 차이점을 확인하기 위하여 육계를 동일한 사육 조건에서 사육하고, 2.0 kg 내외의 시기인 13주령에 맞추어 육계도 도계하여 다소비 부위인 가슴육과 다리육을 분리하여 이화학적 차이를 분석하였다. 가슴육 및 다리육에서 조지방의 함량이 토종닭의 조지방 함량보다 유의적으로 높게 나타났다. pH는 다리육 모두 토종닭보다 육계에서 나타났으나, 보수력과 명도는 큰 차이가 없었다. 그러나 가슴육에서 적색도가 높은 것으로 확인되었다. 조직감의 경우에 있어서는 신선 다리육의 씹힘성이 토종닭에서 나타난 것 이외에는 육계간의 콜라겐 함량은 경우, 6.78 mg/g으로 육계(3.12 mg/g)보다 2배 이상 값을 나타내었다. 결론적으로 동일하게 사육한 13주령의 육계는 비교하여 지방 너무 많고 적기 때문에 토종닭과는 유의적인 보였다. 이는 같은 조건으로 사육한다고 하더라도 육질이 유사해질 수 없음을 의미한다. 본 연구는 토종닭 재래종과 토착종의 교잡을 통하여 생산된 교잡종의 성장과 산란능력을 추정하여, 새로운 품종을 개발하는데 활용하기 위하여 실시되었다. 적갈색과 황갈색의 재래계와 육용종 및 산란겸용종을 2원 교배를 발생한 암평아리 375수를 공시하여, 36주령까지 시험을 실시하였다.
