본 연구에서 쌀가루의 밀가루 대체성 검토를 위하여 쌀가루 전용 품종 '바로미2'와 혼합비율에 따른 이화학적 특성을 조사하였다. BRM-100 (쌀가루)과 BRM-0 (밀가루) 입자는 둥근 형태이고, '바로미2' 혼합비율 증가에 따라 작은 입자가 많이 관찰되었으며 전분 입자크기 분포에서 같은 결과를 확인하였다. 수분함량은 11.26-13.16%, 단백질 함량은 6.95-9.99%의 범위에서 BRM-0이 가장 높았고, 이를 반영하여 유의적으로 감소하였다. 반면 회분과 지방함량은 증가하여 단백질과는 상반된 경향을 나타냈다.
