겔화제의 종류에 따른 겔상식품의 특성을 알아보고자 대조군인 한천첨가 양갱과 다양한 겔화제를 혼합 사용한 양갱을 제조하고 그 비교하였다. 첨가되는 특성은 최종 제품의 수분손실량, 색, 조직감 등의 물리적 특성에 크게 영향을 미치는 것으로 나타났다. 덜 조밀하고 가장 불규칙적인 단면특성을 보이는 gellan 첨가 양갱은 수분 손실이 크고, 부드러우면서도 입에 들러붙는 부착성이 큰 보였다. 반면, LBG+carrageenan 겔의 혼합은 두 상호작용으로 단단한 겔을 만들기 때문에 이를 첨가한 양갱 역시 경도를 본 연구결과 고령자들은 너무 단단하지 않으면서도 응집성이 높고 탄력성이 있어 씹을 수 있는, 그러나 낮은 겔상 식품을 선호하는 종류의 혼합하여 적절한 농도로 제조하면 경도, 부착성, 및 응집성 다양화 할 있으므로 선택, 농도조절 등으로 고령자의 저작능력에 맞는 물성을 갖는 식품제조가 가능할 생각된다. 본 연구는 해설이 있는 클래식 음악공연의 속성을 규명하고 각 속성이 관객의 만족과 재관람의도에 미치는 영향을 분석하여, 음악공연 기획에 실무적 시사점을 제공하는 것을 목적으로 하였다. 이를 위해 관람 경험이 관객들을 대상으로 설문조사를 실시해, 최종 262명의 응답을 실증 분석에 사용하였다. 분석 결과, 속성은 해설자의 호감도, 표현력, 해설의 정보전달, 흥미유발, 연주자자질, 연주내용, 공연장환경, 마케팅 총 8개로 구성되었다. 이중 마케팅이 긍정적인 미쳤으며, 흥미유발은 만족에 오히려 부정적인 것으로 나타났다. 이와 더불어 만족은 미쳤고. 마케팅과 재관람의도의 관계에서 만족의 매개효과를 확인하였다. 이는 관객들이 공연 시 해설을 통해 단순히 재미보다는 양질의 음악 전문 정보를 접하기를 원하며, 다양한 레퍼토리와 악기, 프로모션, 공연에 대한 평론 등에 의해 만족이 좌우된다는 시사한다. 연구의 결과는 음악공연에서 활용할 효과적인 전략 수립에 기초 자료로 활용되어 대중화에...
The purpose of this study was to verify the effect directing dining space bakery cafes on consumer happiness and revisit intention based previous studies. summary analysis results is as follows.
