化粧品材料や食品添加物として使用されているリゾチームとキトサンをメイラード反応により融合させた複合体(以下LYZOXとする)のCandida albicans の菌糸形発育抑制効果を検討した.C. をLYZOXで3 hr処理して,16 hr菌糸形発育誘発条件で培養した.その結果,LYZOX濃度依存的にカンジダの菌糸形発育が抑制された.LYZOXの原料であるリゾチーム,キトサン,またはリゾチームとキトサンの混合物では菌糸形発育抑制効果は弱かった.さらに,LYZOXと中鎖脂肪酸のデカン酸を併用することで相乗効果を示すことが分かった.その併用効果は高く,70%菌糸形発育阻止時のFIC index値は0.20の低値となった.この組成物について,口腔カンジダ症感染マウスへの防御効果を検証したところ,有意な舌症状の改善が確認された.これらの結果をふまえLYZOXを新たな抗真菌活性素材として開発できる可能性について考察した.
