A naringenin derivative, isolated from Cyclopia genistoides, a bitter tasting herbal tea, especially when in green (unoxidized) form, was identified as (2S)-5-[α-l-rhamnopyranosyl-(1→2)-β-d-glucopyranosyloxy]naringenin (1). The compound partially epimerizes to (2R)-5-[α-l-rhamnopyranosyl-(1→2)-β-d-glucopyranosyloxy]naringenin (2) heated at different temperatures (80, 90, 100, 110, and 120 °C) for prolonged period phosphate buffer pH 5. fractional conversion model predicted the decrease...
Abstract BACKGROUND There is epidemiological evidence that fruits and vegetables promote general health due to their phenolic composition. The composition of three commercially important citrus varieties (‘Mandarin’, ‘Navel’ orange ‘Valencia’ orange), used for frozen concentrated juice (FCOJ) production in South Africa, were evaluated based on variety, season geographical region (Western Cape (WC) Eastern (EC)). RESULTS FCOJ from the WC had significantly ( P < 0.05) lower titratable...
