어린이 먹거리 안전관리를 위한 목적으로 경기지역 6개 도시 12개소의 어린이집을 대상으로 여름철과 겨울철에 각각 5일간 현지 출장하였으며, 실측량 기록법으로 단체급식에 제공되는 식품의 섭취량을 조사하였고 총 601건의 시료를 수거하여 식품 중 나트륨 조사?연구하였다. 조사결과 어린이집의 한 끼니 당 평균 섭취량은 582.2 ㎎으로 세계보건기구와 세계농업기구(WHO/FAO)의 성인 섭취 권장량의 2,000 ㎎/1일의 29.1%를 차지하고 있었으며, 본 연구의 조사대상이 어린이임을 고려하면 매우 높은 양이다. 섭취에 가장 영향을 미치는 식품군은 국 및 탕류로 어린이집 섭취량의 35.7%를 차지하는 것으로 나타났다. 따라서 국에서 섭취를 줄이는 방법이 어린이집에서 효율적인 저감화가 될 사료된다. 겨울철의 572.3 ㎎, 592.3 나타나 섭취량이 나타났으나 유의적 차이는 없었으며, 지역특성에 따른 공단지역이 696.4㎎으로 나타났고, 적은 지역은 아파트단지로서 514.3 ㎎이었다....
