The article provides an overview of the current state research in field requirements for quality potatoes processing them into potato products. It is noted that with white pulp determined by mass fraction of: dry matter over 20 %; reducing sugars 0.2-0.5 %, glycoalkaloids no more than 200 mg/kg; starch not less 16 %.
