We isolated a major wheat flour allergen with molecular weight of 15-kD. The 15-kD was purified from an extract by ammonium sulfate precipitation followed gel filtration. Using the immunoblot technique, IgE, specifically directed towards single allergen, detectable in 50% applied sera. determined N-terminal amino acid sequence and identified it as α-amylase inhibitor protein.
