A simulated in vitro digestion model was used to elucidate the impact of dietary fibers on rate emulsified lipids. The influence polysaccharide type (chitosan (cationic), methyl cellulose (non-ionic), and pectin (anionic)) initial concentration (0.4 3.6% (w/w)) examined. 2% (w/w) corn oil-in-water emulsions stabilized by 0.2% Tween-80 were prepared, mixed with polysaccharide, then subjected an (37 °C): (pH 7.0); oral 6.8; 10 min); gastric 2.5; 120 and, intestinal 7.0; min) phases....
An in vitro gastrointestinal model consisting of oral, gastric, and intestinal phases was used to elucidate the impact pectin on digestion emulsified lipids. Pectin reduced extent lipid digestion, which attributed its binding interactions with specific components. The interaction bile salts, lipase, CaCl2, NaCl therefore investigated by turbidity, microstructure, electrophoresis, isothermal titration calorimetry (ITC) at pH 7.0 37 °C. ITC showed that endothermic but exothermic NaCl, lipase....
The aim of this study was to explore the potential agroindustrial waste from two Colombian mango cultivars as sources bioactive phenolic compounds. Phenolic extracts (peels, seed coats, and kernels) ‘sugar mango’ ‘Tommy Atkins’ were obtained. properties accessed by measuring their free radical scavenging activity antioxidant effects against lipid oxidation in food products; moreover, antiproliferative some cell lines human cancer explored. It is observed that studied provides promising...
Phenolic compounds from mango (M. indica) seed kernels (MSK) var. Sugar were obtained using supercritical CO2 and EtOH as an extraction solvent. For this purpose, a central composite design was carried out to evaluate the effect of pressure (11-21 MPa), temperature (40-60 °C), co-solvent contribution (5-15% w/w EtOH) on (i) yield, (ii) oxidative stability (OS) sunflower edible oil (SEO) with added extract Rancimat method, (iii) total phenolics content, (iv) flavonoids (v) DPPH radical assay....
