Currently, there is an interest in studying natural inhibitors of dipeptidyl peptidase IV (DPP‐IV) for the treatment type II diabetes. To look novel inhibitors, primary and secondary whey fresh Oaxaca cheeses was obtained, electrophoretic patterns were determined. Hydrolysis with pepsin trypsin from cheeses, respectively, showed DPP‐IV inhibition values ~51 55%, also IC50 92.86 μg/mL cheese‐derived peptides.
