Purpose The purpose of this paper is to present a decision‐making framework for outsourcing levels logistics activities. These are: execution level basic activities (such as transportation, warehousing); value‐added activities; planning and control transportation inventory management); strategic (distribution network design). Design/methodology/approach research design comprises three stages. Literature review was undertaken study theories. Successively, case studies on food manufacturers...
This research prepared chitosan–PLA plastic films by extrusion, analyzed the physical and mechanical properties antibacterial activity of fabricated films, used them to preserve grouper fillet. We added chitosan (220 kDa, 93% DD) in weight ratio 0.5–2% into PLA prepare films. With increasing dosage, both water vapor transmission rate moisture content increased. Among three doses (0.5%, 1%, 2%) PLA, 0.5% film had highest activity. an inhibitory efficiency over 95% against Escherichia coli,...
ABSTRACT Staphylococcus aureus is a major food‐borne pathogen and easy to be induced into viable but nonculturable state under stress conditions from food processing, causing significant potential risk public health. In this study, the primers for femB gene were examined specific S . 10 μM of PMA was determined as optimal treatment concentration minimize PCR amplification signal produced by dead bacterial DNA. When ∼10 7 CFU/mL treated with sorbic acid, about 85% ATCC 6538 cells 76% ‐1 VBNC...
This study aimed to increase the antibacterial activity of chitosan-polylactic acid (PLA) composite film by adding nisin and ethylenediaminetetraacetic (EDTA). We evaluated mechanical, physicochemical, properties various PLA films, as well enhancement effect films with EDTA + on preservation grouper fillets. Films alone, plus chitosan (C5), (EN2), (C5EN1 C5EN2) were prepared. The addition chitosan-PLA matrix significantly improved film, C5EN1 C5EN2 showing highest among five films. Compared...
TTIs are smart labels designed to monitor food product temperature history that could be used reflect quality throughout the cold chain. The objectives of this study develop a microbial TTI for vacuum-packed grouper fish fillets and then test if reflects microbiological biochemical changes in fillets. Under constant dynamic storage conditions, colour change can indicate three grades freshness—very fresh, spoiled—based on total volatile basic nitrogen (TVB-N) levels. Overall, similar...
This study aimed to investigate and quantify the relationship between climate variation incidence of Vibrio parahaemolyticus in Taiwan. Specifically, seasonal autoregressive integrated moving average (ARIMA) models (including autoregression, seasonality, a lag-time effect) were employed predict role climatic factors temperature, rainfall, relative humidity, ocean temperature salinity) on V. Taiwan 2000 2011. The results indicated that (+), salinity 6 months ago maximum daily rainfall...
Purpose This paper aims to investigate outsourcing of different types logistics activities in Taiwanese food industry, and benchmark with practices The Netherlands. Design/methodology/approach four levels is investigated: transportation (level 1), packaging 2), management 3), distribution network 4). A structured questionnaire was designed sent managers Netherlands Taiwan evaluate the most commonly outsourced identify specific firm's characteristics. Findings About 69 per cent companies,...
Food safety concerns regarding foodborne pathogen contamination have gained global attention due to its significant implications. In this study, we developed a detection system utilizing PCR array combined with an automated magnetic bead-based and CE technology enable the of three pathogens, namely Salmonella enterica, Listeria monocytogenes, Staphylococcus aureus. The results showed that our method could detect these pathogens at concentrations as low 7.3 × 101, 6.7 102, 6.9 102 cfu/mL,...
