The objective of the present work was to determine nutrient and polyphenolic composition dried strawberry press cake (SPC), as well that its seedless fraction, termed exhausted flesh (ESF). study materials were obtained over three consecutive years from an industrial facility manufacturing concentrated fruit juices. On average, SPC consists 40 % seeds, 3.5 sand, about 55 ESF. In dry matter ESF, mean content fat is 9.8 %, protein 17.3 20.4 total polyphenols 3,449 5,410 mg/100 g, respectively....
