매실식초 사입액에서 초기 매실액의 농도가 1~6%일 때는 높을수록 유도기가 짧아져 높은 초산생성능을 보이다가 6%를 넘어서면 길어져 초산생성능이 저하되는 경향을 보였다. 6%의 매실액을 함유한 사입액은 발효 5일째 9.2%의 최종 산도에 도달하였고, 다른 농도의 첨가구보다 산도를 3% 초산, 6% 알콜, 사입액 100 ㎖를 발효시킬 경우 표면적이 25 ㎠인 발효용기를 사용하는 것이 10 ㎠와 50 ㎠의 발효용기에 배양한 것보다 초산 생성능이 우수함을 확인하였다. 또한 매실액 사입액을 진탕 발효시켰을 정치 발효에 비해 길었고, 배양 9일째에 산도가 9.44%로 나타나서 약2.02% 낮게 나타나 이용한 초산발효에서는 진탕배양보다 배양이 더 효과적이었다. 매실식초의 유기산성분을 분석한 결과 주요 유기산은 acetic acid, succinic citric acid이었고 그 함량은 각각 6167.01, 347.04, 76.67 ㎎%이었다. 유리당은 glucose와 fructose로...

산머루를 이용한 와인 발효를 위하여 거봉, 머스컷베리에이, 산머루의 과피와 과육에서 20종의 야생 효모를 분리하여 알코올 내성과 발효능이 우수한 4종의 균주를 산머루 와인발효용 우량 종균으로 선별하였다. 위한 최적 초기당도와 최적발효온도를 검토한 결과, 산머루액의 초기당도를 24oBrix로 조절하고 24oC에서 발효했을 때 최종알코올 함량이 12%로 가장 높게 나타났으며 단맛, 신맛 및 색깔이 우수하고 기호도가 우수하여 위해 조절하여 발효하는 것이 적합할 것이라 생각된다. 최적발효조건으로 제조된 와인의 품질특성을 분석한 산머루와인의 pH는 3.59, 산도는 0.95%, 함량은 12.0%이었으며, 아미노산도는 1.80 ㎎/㎖로 시판 포도 와인과 유사하게 나타났다. 총당 50 시판포도 와인에 비해 높으나 신맛을 감화시켜주므로 맛을 더욱 부드럽게 해 줄 것으로 사료된다. 항산화, 항당뇨 등의 기능성을 가지는 polyphenol 와인에서 25.30 ㎎/㎖, tannin 1.88 본...
본 연구에서는 발효과정 중 누룩의 일반성분 및 효소 활성변화를 측정하고, 단백질의 분해정도와 밀 단백질에 민감한 환자의 혈청과 반응성을 관찰하였다. 수분함량은 발효 1일 24.20%였으며 발효가 진행됨에 따라 미생물의 이용과 증발로 인해 감소되어 15일에는 13.60%를 나타내었다. 누룩 총당과 환원당의 함량은 발효시간이 경과함에 증가하는 경향을 초기조단백질 1.58%였으나 다소 증가하여 2.05%로 나타났다. 또한 조지방 초기 1.32%였으며 2.24%로 증가함을 α-Amylase 활성은 1,416.67 U/g에서 2,833.00 U/g으로 급격히 증가하였으며, glucoamylase 497.90 10일 경과 후 705.40 최대 활성을 보였으나 그 완만한 감소를 산성 protease 초기에는 검출되지 않았으나 10일에 75.00 증가하기 시작하여 327.00 U/g에 도달하였으며 중성 활성도 90.00 354.00 U/g로 검출되었으며 이후에도 계속 증가하였다. 반면에...
