Quinoa (Chenopodium quinoa Willd) contains 2 to 5% saponins in the form of oleanane-type triterpenoid glycosides or sapogenins found external layers seeds. These confer an undesirable bitter flavor. This study maps content and profile glycoside-free from 22 varieties 6 original breeding lines grown North America under similar agronomical conditions. Saponins were recovered using a novel extraction protocol quantified by GC-MS. Oleanolic acid (OA), hederagenin (HD), serjanic (SA),...

In response to the imperative address food and agricultural waste promote environmental sustainability, this study investigates transformation of watermelon rind into a valuable resource. We extract polyphenols antioxidants from freeze-dried across four cultivars (Crimson Sweet, Black Prince, Chairman, Sugar Baby) using ultrasound-assisted extraction. Solvent selection, based on preliminary experiment, was optimized through surface methodology (RSM), fine-tuning solvent concentration...

Abstract Although membrane environment is known to boost drug metabolism by mammalian cytochrome P450s, the factors that stabilize structural folding and enhance protein function are unclear. In this study, we use peptide‐based lipid nanodiscs “trap” boundaries of microsomal P450 2B4. We report first evidence CYP2B4 able induce formation raft domains in a biomimetic compound endoplasmic reticulum. NMR experiments were used identify quantitatively determine lipids present nanodiscs. A...

The average American consumes more than 50% of their total dietary energy from ultra-processed foods (UPFs). From a nutritional standpoint, as UPFs intake increases, fiber, vitamin, and mineral decrease. High consumption UPFs, mainly fast (FF) ready-to-eat (RTE) food items, emerges critical public health concern linking quality safety. In the present work, systematic database fatty acid composition most consumed in Midwest is reported. Saturated monounsaturated acids were predominant RTE...

Abstract Extrusion of 2 quinoa varieties, Cherry Vanilla and Black (scarified unscarified) a mixed variety, Bolivian Royal degermed) were studied for their extrusion characteristics. A corotating twin‐screw extruder with 3 mm round die was used. Feed moisture contents 15%, 20%, 25% (wet basis) studied. The barrel temperature kept constant at 140 °C screw speeds varied from 100, 150, 200 revolutions per minutes. Process responses (specific mechanical energy, back pressure, torque) product...

Removal of basal leaves near blooms inevitably affects grapevine balance and cluster microclimate conditions, improving fruit quality. Mechanization this practice allows growers to save time resources, but our knowledge, it has not yet been compared with the manual application in a cool-climate region where seasonal temperatures frequently limit technological maturity phenolic ripening red Vitis vinifera cultivars. In research, berry sugar concentration was highest prebloom mechanical...

Ultra-processed foods (UPFs) have gained substantial attention in the scientific community due to their surging consumption and potential health repercussions. In addition well-established poor nutritional profile, UPFs been implicated containing various dietary oxidized sterols (DOxSs). These DOxSs are associated with a spectrum of chronic diseases, including cardiometabolic conditions, cancer, diabetes, Parkinson's, Alzheimer's disease. this study, we present comprehensive database...

Lipids are critical for the function of membrane proteins. NADPH-cytochrome-P450-reductase, sole electron transferase microsomal oxygenases, possesses a conformational dynamics entwined with its topology. Here, we use peptide-nanodiscs to unveil cytochrome-P450-reductase's lipid boundaries, demonstrating protein-driven enrichment ethanolamine lipids (by 25%) which ameliorates by 3-fold CPR's electron-transfer ability.
