Enzyme-assisted extraction optimization, characterization and in vitro antioxidant activity of polysaccharides from sea cucumber Phyllophorus proteus (PPP) were investigated the present study. The optimal conditions with a yield 6.44 ± 0.06% for PPP determined as follows: Extraction time 2.89 h, ratio solvent to raw material 16.26 mL/g, pH 6.83, exraction temperature 50 °C papain concentration 0.15%.
