Tyrosinase는 피부의 melanocytes에서 멜라닌 생성을 촉진한다. 목단피의 미백효과를 알아보기 위하여 목단피 물추출물의 항산화 능력과 tyrosinase 활성 억제에 미치는 영향을 세포 모델계와 a cell-free 모델계에서 알아보았다. MDP의 라디칼 소거작용은 DPPH assay로 알아보았고, MDP는 높은 소거작용을 보여주었다. 세포내 활성은 RT-PCR, 효소활성을 마우스 B16 세포내에서 측정함으로써 24시간 물 추출물을 투여한 mRNA와 효소활성이 무처리군과 비교하여 현저히 감소하였다. 이와 같은 결과들은 항산화력이 높고, tyrosinase를 효과적으로 억제할 수 있는 이용하여 melanin 생합성을 미백 화장품 개발에 활용할 가능성을 제시하고 있다.

본 연구는 미나리(Oenanthe javanica, MNR), 율무(Coicis lachryma-jobi L. var., YM) 및 차전자(Plantaginis asiatica L, CJJ) 물 추출물이 지질 대사 관련 효소들인 lipoprotein lipase(LPL), acyl-CoA synthetase(ACS) 그리고 carnitine acetyltransferase(CAT) 활성에 유익한 영향력을 미치는지 알아보았다. LPL와 ACS는 비만 모델군 Zucker fatty 흰쥐(fa/fa)와 대조군인 lean 흰쥐(lean)의 부고환 지질과 간에서 각각 분리하였다. MNR이나 YM 추출물 처리는 일반(lean) 비만(fa/fa) 흰쥐로부터 분리한 LPL 활성을 현저하게 감소시켰다. 본 연구의 목적은 국내 주요 밤 5품종(단택, 대보, 석추, 옥광, 병고)의 전체과육, 흰과육 그리고 노란과육을 10개월 동안 냉장(4℃), 냉동(-10℃) 저장 중에 수분, 조단백질, 조지방, 비타민 C 당의 함량 변화를 알아보므로 국내산 밤의 이용가치를 높일 수 있는 저장방법 및 가공식품 개발을 위한 기초자료를 제공하는 것이다. 5품종의 전체과육 중수분함량은 49.9~57.4%였으며, 석추(57.4±0.2%)가 5품종 중 수분함량이 가장 높았고, 단택(49.9±0.1%)이 낮았다. 단택을 제외하고 시료의 흰과육이 전체과육보다 더 노란과육보다 흰과육에서 높았다. 냉장(4oC), 수분함량 보면 감소하는 경향이었다. 조단백질 함량은 3.3~4.2%였으며, 대보(4.2±0.2%)에서 함량이 단택, 병고를 10개월간 냉장 저장한 후 함량을 전과 비교한 결과 유의적으로 증가하였으나, 대보의 전체과육은 감소하였고, 노란과육은 변화가 없었다. 냉동 옥광의 전체시료에서만 조단백질이...
