Salmorejo, a Mediterranean tomato-oil puree, is considered dietary source of antioxidant vitamins C and E carotenoids lycopene β-carotene, the latter endowed with provitamin A activity. However, these antioxidants can be degraded in oxidation reactions catalysed or not by enzymes during pasteurisation storage treatments used to stabilise salmorejo before consumption. Due its better penetration, use dielectric heating radiofrequency (RF) may improve results this product. The objective was...

Tomatoes provide an optimal mix of dietary antioxidants that may be responsible for the reported health benefits tomato consumption. However, technological processing, packaging materials, and storage conditions have impact on nutritional quality products by affecting stability antioxidant nutrients to different extents. In this study, we evaluated compounds (lycopene, ascorbic acid, total phenols, flavonoids) present in commercially available juices during extended 12 months at three...

Non-alcoholic fatty liver disease (NAFLD) is defined as the accumulation of fat in cells, which causes serious health consequences. Animal and human studies suggest that gut microbiota plays a role pathogenesis NAFLD. Here, we investigated whether spinach consumption could ameliorate high-fat-diet-induced disturbances certain intestinal bacterial groups products derived from their metabolism, such short-chain acids (SCFAs) microbial phenolic catabolites. Attention also paid to blood lipids...

Background and objectives Primary objectives: to compare the rates of sustained clinical remission at 12 months in patients treated with antitumour necrosis factor (anti-TNF) immunomodulators who withdraw anti-TNF treatment versus those maintain it. Secondary evaluate effect withdrawal on relapse-free time, endoscopic radiological activity, safety, quality life work productivity; identify predictive factors for relapse. Design Prospective, quadruple-blind, multicentre, randomised, controlled...

Chocolate is made from cocoa, which rich in (poly)phenols that have a high antioxidant capacity and are associated with the prevention of chronic diseases. In this study, new production process was evaluated order to obtain dark chocolate enriched using cocoa powder an improved flavanol profile. The (Oxygen Radical Absorbance Capacity (ORAC) assay) profile (HPLC-DAD HPLC-FL) determined. analysis showed total flavan-3-ols (monomers) content 4 mg/g representing 3-fold higher than quantified...

Different strategies have been developed to increase the concentration of bioactive compounds in tomatoes during post-harvest, with ultraviolet light (UV) and emitting diodes (LEDs) being interesting tools. The aim this study was evaluate effect (UVA at 366 nm UVC 254 nm) pre-treatment (1 kJ/m2) red–blue LED (25.4 µmol/m2/s) on carotenoids, (poly)phenols hydrophilic/lipophilic antioxidant capacity 7 days refrigeration storage green (Solanum lycopersicum L.) cultivar “Raf”. ABSTRACT: A 1‐y storage trial was designed involving different temperatures (8, 21, and 30 °C) to assess the antioxidant properties of a dessert formulated with concentrated juices grape, blackberry, blackcurrant, raspberry, cherry. The total activity (TAA) measured as scavenging capacity 2,2′‐azino‐di‐[3‐ethylbenzothiazoline‐6‐sulphonate] radical cation (ABTS) its iron‐reducing ability (FRAP). Color spectrophotometrically measured, vitamin C phenolics were analyzed by HPLC. color parameters...

The aim of this research was to assess the total antioxidant activity (TAA) lipophilic (L extr ) and hydrophilic (H tomato extracts using in vitro chemical tests cell-based assays, focusing on possible synergistic actions between antioxidants. Both H L were HPLC analysed for their carotenoids, phenolic compounds, ascorbic acid contents. For evaluation TAA, assayed alone or combination (TEAC, FRAP) (CAA) assays human hepatoma (HepG2) histiocytic lymphoma (U937) cells. only carotenoid detected...

Abstract Tomato is rich in different bioactive compounds, especially the carotenoid lycopene, which intake associated with various health benefits. Post-harvest use of ultraviolet light (UV) and light-emitting diode (LED) has been shown to increase concentration tomato compounds. The aim this study was evaluate effect (A C) red-blue LED on carotenoids during a 7-days storage trial mature green tomatoes. Exposure combined UV nearly doubled total had no negative impact sensory attributes.
