Abstract Oleic, linoleic and linolenic acids were autoxidized more rapidly than their corresponding methyl esters. Addition of stearic acid accelerated the rate autoxidation linoleate decomposition hydroperoxides. Therefore, higher oxidative FFA's esters could be due to catalytic effect carboxyl groups on formation free radicals by also soybean oil. This result suggests that particular attention should paid FFA content affects stability oils.
